I feel like blueberry banana bread is such a classic that everyone loves. It’s one of my favourite things ever to make and it comes out amazing every time.
This is an easy recipe for the softest banana bread that is full of juicy blueberries.
It’s made with gluten free flour, a hint of maple syrup, and lots of mashed banana for sweetness. Instead of using coconut oil for moisture as I usually do I decided to experiment with using yogurt. I was so happy with the results! I used coyo diary free yoghurt but Greek yoghurt would work well too!
It’s perfect for a quick breakfast, mid-morning snack, or even a light dessert. The banana bread will keep for at least 6 days if stored in an airtight container in the refrigerator. This banana bread is vegan and gluten free.

- 2 cups buckwheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- 2 chia eggs
- ¼ cup yogurt (I used coyo)
- 2 mashed bananas
- 2 tbsp maple syrup
- ¼ cup almond milk
- 1 cup blueberries
- Pre heat over to 325 F/ 165 c
- Mix all the ingredients in a bowl and mix
- In a separate bowl mix together all the wet ingredients except for the blueberries
- Fold in the blueberries and transfer to a prepared loaf tin
- Bake for around 50-55 minutes
