Truth be told, this time of year when it’s cold and dark, all I crave is comfort food. When it comes to dinner time, I want something warming, comforting and satisfying that doesn’t take ages to make.

This healthy pasta recipe with, butternut squash, kale and walnuts is the perfect choice. It is easy to make, quick and most importantly filling and nourishing.


Vegan Butternut Squash, Kale and Walnut Healthy Pasta Recipe

This recipe is gluten free and suitable for vegans. I hope you love this as much as I do.


Recipe- Butternut Squash, Kale and Walnut Healthy Pasta Recipe

Ingredients

  • 200g gluten free pasta
  • 3 tbsp olive oil
  • 2-3 garlic cloves, finely diced
  • 2 cups of cubed butternut squash
  • about 100 g kale
  • ½-1 tsp chilli flakes
  • ½ lemon, zest and juice
  • salt and pepper, to taste
  • 30 g walnuts, finely chopped

Method

  1. Combine butternut squash with 1 tbsp of olive oil and season with salt, transfer to a prepared baking tray.
  2. Bake in a preheated oven (225º C / 435º F) for around 40 minutes (may take a bit longer depending on your oven), until butternut squash turns soft and gets slightly caramelised.
  3. Cook your pasta according to the instructions
  4. Heat up 2 tbsp of olive oil in a pan on medium heat and then add the garlic. After a few minutes add the chilli flakes and cook for another few minutes stirring frequently.
  5. Once baked, add your butternut squash to the pan
  6. Drain pasta and add this with the washed and drained kale into the pan, mixing in with the butternut squash
  7. Taste and add pepper, a squeeze of lemon juice and additional salt and chilli if needed.
  8. When ready to serve add chopped walnuts and lemon zest
  9. This healthy pasta tastes amazing on it’s own or you can serve with your favourite protein.
