Breakfast has always been my favourite meal of the day,  I could just eat breakfast foods all day long! I love porridge because it’s delicious, cosy, comforting and warming. It also keeps me full and energised for hours. I always crave something sweet in the morning too. Porridge is perfect as you can add a little bit of sweetness and any toppings you wish!


If you adore breakfast foods like I do and ever wake up craving dessert for breakfast, then you will love this. The taste of carrot cake in a healthy, hearty, warming breakfast.

I used gluten free oats to make this recipe gluten free, this is suitable for vegans.

Recipe- Delicious Cake cake porridge for a comforting and wholesome start to the day. 

Ingredients

  • 1 large grated carrot
  • 1 tsp maca
  • 1 cup almond milk
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/2 cup gluten free oats
  • 1 tbsp chopped walnuts, divided
  • 1 tbsp raisins divided
  • 1 tbsp pure maple syrup
  • 1 tbsp shredded coconut for garnish

Method

  1. In a pot over medium heat, add the milk, cinnamon, maca, nutmeg, ginger, oats and grated carrot.
  2. Cook for around 5-7 minutes stirring often.
  3. Once thickened to your desired consistency remove from heat and add the nuts, raisin, coconut flakes and maple syrup
