A lovely warming carrot and coriander soup. Perfect for those chilly autumn and winter months.

This carrot and coriander soup is incredibly simple and quick to to make and you only need a few ingredients. It’s light and fresh, and it freezes really well too. Plus it’s so delicious!

Carrot and coriander is a favourite flavour combination of mine and together they make a delicious soup. It’s easy to change up the spices too, to adjust the flavour.

Flavoursome, warming and healthy, carrot and coriander soup is a simple meal that goes well with oatcakes or bread. I love making this at the beginning of the week and taking it to work.

Plus this recipe is seriously packed full of vitamins and nutrients, thanks to the onion, carrot and sweet potato.

Carrot and Coriander Soup

Carrot and Coriander Soup

Ingredients

  • 500g carrots, chopped
  • 1 sweet potato, diced
  • 1 onion, chopped
  • 1 litre vegetable stock
  • 1 heaped tsp ground coriander
  • 1 handful of fresh coriander
  • coconut Oil
  • 1 garlic clove

Instructions

  1. In a little coconut oil fry the onions, garlic and potatoes in a saucepan. After a few minutes add the ground coriander and carrots. Add the vegetable stock and leave to simmer until the vegetables are soft.
  2. When the carrots and potato are cooked remove from heat and blend it all together in a food processor, with the fresh coriander.
  3. Reheat and serve
