Chocolate Granola Cups with Cherry Cream

They are surprisingly easy and simple to make and you can customise them with your favourite filling and toppings. This recipe is gluten free and suitable for vegans.

Recipe- Chocolate Granola Cups with Cherry Cream

Ingredients

Granola Cups

  • 1/4 cup mashed banana
  • 1/4 cup maple syrup
  • 2 tbsp cacao
  • 1/2 tsp cinnamon
  • 1 1/4 cup gluten free oats

Cherry Cream

  • 1 cup cashews, covered in water and soaked overnight
  • 2/3 cup frozen cherries
  • 1 tablespoon maple syrup
  • 1/4 cup water

Method

Chocolate Granola Cups

  1. Preheat oven to 350F/175C
  2. Grease a muffin tin and set aside
  3. Whisk together the maple syrup and mashed banana
  4. In a separate bowl combine all other ingredients
  5. Mix these two together until evenly mixed
  6. Transfer the batter to the muffin cups pressing up the sides
  7. Bake for 12 minutes
  8. Leave to cool for at least 15 minutes before removing

Cherry Cream

  1. Place all of the cherry cream ingredients in a high speed blender and blend till smooth.
  2. Once the cups are cool, remove from the tin, top with cherry cream and any toppings you like
