These gooey coconut berry breakfast bites are so satisfying and filling. I’ve been enjoying them as a snack, dessert and even for breakfast!
These are the ultimate breakfast bars, made with all natural, nourishing ingredients that will beautify and make your skin glow. They are satisfying and filling and taste much better then the shop brought ones! Made with simple ingredients that most of us have in our fridge. They are completely fuss free.
They also make a great get me through the morning snack or an afternoon pick-up. Or even a light vegan dessert. I made a big batch today so I can save time throughout the week and grab a few when I’m in a rush.

Recipe- Vegan Coconut Berry Breakfast Bites
3 cup Oats (I use gluten free)
1/2 cup Pue Maple Syrup
1 cup Blueberries (I used frozen)
1/2 cup Strawberries Chopped (I used frozen)
1 cup Milk of choice (I used Almond)
3 tbsp Desiccated Coconut
1/4 cup cacao powder
1/4 cup Maple Syrup
Preheat your oven to 200c
Combine the oats, milk and maple syrup in a large bowl
Gently fold in the berries and coconut
Transfer the mixture to the baking tray and bake for around 30 minutes or until golden
Whilst the bars are baking whisk together the cacao and maple syrup
Remove bars from the oven and allow to cool completely before drizzling the top with the chocolate mixture. Allow this to set then slice and enjoy
