Coconut and Chia Energy Ball

Coconut and Chia Energy Balls. Perfect on the go delicious snack. Naturally vegan and Gluten free. 

I just whipped up the most delicious vegan gluten-free energy balls from just a few simple ingredients. These are great as a snack, a dessert or you could even grab a few for breakfast when your super busy.

Today I took a few of these to work with me as an after lunch snack. They give me lots of energy and they taste absolutely amazing – plus did I mention they’re actually healthy?


Coconut and Chia Energy Ball Recipe

 Dates – the primary ingredient, are rich in minerals and vitamins such as B-vitamins and are very low in fat.

Almonds – give a protein hit and also contain lots of fibre, protein, magnesium and vitamin E.

Coconut Oil – give a dose of healthy fats that will keep you full all day and is also great for the skin.

Cacaois amazing for you, it contains many essential minerals such as, magnesium calcium, sulfur, zinc, iron, copper, potassium, and manganese. As well as vitamins: B1, B2, B3, B5, B9, E, protein, fibre and healthy monounsaturated fat.

Chia Seeds – rich in fiber, omega-3 fats, protein, vitamins and minerals and are amazing for digestion

These little coconut and chia energy balls are the perfect pick me up to help you fight that afternoon slump! They’re sweet but not sickly and have a lovely, slightly chewy texture.

I like to make different flavour combinations of these and keep them in my fridge so I always have some good healthy snack at hand.


Recipe -Coconut and Chia Energy Ball

Ingredients

Recipe

  1. Add all ingredients to a food processor and blitz until combined
  2. Roll into balls with the palm of your hand
  3. Roll in the remaining coconut and store in the fridge
