Healthy Blueberry Pie Porridge Recipe for a delicious and comforting start to the day. Vegan and Gluten Free
You just can’t beat porridge for a cosy and comforting start to the day. I’ve been waking up craving this porridge most days. This is a wonderfully easy porridge recipe, it’s so quick to cook and it uses just 6 ingredients, so you can throw it together in no time.
The blueberry compote is really easy to make, you can make it whilst the porridge is cooking. The blueberry compote is also amazing delicious with coconut yoghurt!
I always like to add a bit of crunch (and protein) to my porridge so I topped it off with flaked almonds and coconut flakes. I think almond butter would also be delicious as well.

Recipe- Healthy Blueberry Pie Porridge Recipe. Vegan + Gluten Free
- 1/2 cup blueberries (frozen or fresh)
- 1 tbsp water
- 1 tbsp maple syrup
- 1 cup oats
- 2 cups almond milk
- 1 tsp cinnamon
- flaked almonds
- coconut flakes
- To make the porridge, Place the oats, cinnamon and maple syrup and almond milk into a sauce pan, bring to simmer and cook until most of the water is absorbed, stirring occasionally. Once
- Whilst the porridge is cooking add the blueberries into a pan with 1 tbsp water and gently poach heat the blueberries until they are tender, but still holding their shape.
- Transfer porridge to a bowl and top with the blueberries, almond and coconut flakes
