Healthy Chai Spiced Baked Doughnuts

Chai Spiced Baked Doughnuts for a healthy, vegan and gluten free dessert or snack

I have always been obsessed with chai, there’s something that’s so comforting about the delicious spicy and warming flavour.


Embracing the change of seasons and welcoming these cozy autumn days, I decided to make Chai spiced doughnuts. Packed with some of my favourite spices, and it turned out amazing! Ten minutes in the oven and my kitchen was filled with the most wonderful smell –  a warming blend of cinnamon, ginger, nutmeg, cardamom and mixed spice.

I’ve listed the ratio of spices I used in the recipe below, but you can adjust to your own taste.

What I love about these healthy Baked Chai Doughnuts is the fact that they are not at all overwhelming. There is only a hint of chai which gives it this lovely warm and delicate flavour. They are just as perfectly delicious as any store bought doughnut and they are much more healthy. This recipe is vegn and gluten free and contains no refined sugar.

I used this doughnut pan and haven’t stopped using it since I brought it. Doughnut pans are seriously the best invention ever! Doughnuts are usually made with lots of oil, which we all know is really not good for us, so by using the doughnut pan you can make your favourite donuts without all that added oil from the frying process.

So if you don’t mind adding another bit of equipment to your collection, maybe think about getting one of these pans, they’re relatively inexpensive and produce the cutest little treats.


Recipe- Chai Spiced Baked Doughnuts for a healthy and delicious snack or dessert.

Ingredients

Chai Spiced Baked Doughnuts

  • 1 1/4 cups flour (I used buckwheat)
  • 3/4 cup granulated sugar ( I used coconut)
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 teaspoon ground nutmeg
  • chia egg
  • 2/3 cup coconut oil
  • 1/2 cup milk (I used almond)
  • 1 tbsp maple syrup
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground ginger
  • 1/4 tsp mixed spiced
Chai Spiced Sugar Coating
  • ¾ cup coconut sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground ginger
  • 1/4 teaspoon mixed spice
  • ½ cup (8 Tablespoons) coconut oil, melted

Method

Chai Spiced Doughnuts

  • Heat oven to 350°F/175c
  • Lightly spray a doughnut pan with cooking spray
  •  In medium bowl, stir together flour, granulated sugar, baking powder, salt, cinnamon and nutmeg 
  • In a separate bowl beat chia egg, oil, milk, maple syrup, and with a whisk.
  • Pour wet ingredients into dry ingredients; fold until just combined.
  • Transfer mixture to the doughnut pan filling about half full.
  • Bake on centre oven rack 10 to 12 minutes or until doughnuts are golden around edges and spring back when touched.
  • Remove from oven, repeat with remaining batter
Spiced Sugar Coating
  1. In a small bowl (wide and shallow enough to dip your donuts into), combine the sugar, cinnamon, cardamom, and ginger. Toss together until thoroughly mixed. Set aside.
  2. Melt the butter in a small bowl (wide and shallow enough to dip your donuts into). Dip each donut in the butter, coating all surfaces. Then, place buttered donut in the spiced sugar coating, flipping a couple times to coat all surfaces. Transfer to wire rack to cool until ready to serve. Donuts are best enjoyed the day they are made, but will stay fresh covered tightly at room temperature up to 2 days. Donuts freeze well, up to 2 months. Thaw in refrigerator overnight. Reheat in the microwave as needed.
