Does anybody else have a serious weakness for freshly baked cookies?
We got back from Paris (you can follow along with my travels and daily life on Instagram) a few days ago and were really craving something sweet! I had a look at the ingredients I had and came up with this recipe and am so happy with the results! The batch didn’t even last 24 hours.

Healthy ginger cookies. These cookies are gluten free, vegan, grain free and contain no refined sugar! Highlight of my week for sure!

They are super easy to make to with just 10 easy ingredient needed. Perfect for keeping your sweet cravings at bay. The contain lots of protein so will keep you full and energised, without the sugar crash regular cookies do.


Recipe -Healthy Ginger Cookies for an easy and healthy treat
 
 Ingredients
  • ½ cup smooth cashew nut butter
  • ¼ cup melted coconut oil
  • ¾ cup Coconut Sugar
  • 1chia egg
  • 1 and 1/3 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • ½ teaspoon Allspice
  • 2 teaspoons Ground Ginger
  • 1 teaspoon Cinnamon
Method
  1. Preheat oven to 175 degrees and line a baking tray with parchment paper
  2. In a medium bowl, whisk together cashew nut butter, coconut oil, coconut sugar, and chia egg
  3. Once mixed well, add in almond flour, coconut flour, baking powder and spices and mix well again (I used hand mixer for both steps)
  4. Scoop the dough and form into cookies and add to baking tray (I did about 2 spoonfuls per cookie)
  5. Bake in oven for 10-12 minutes or until cooked through
  6. Let the cookies cool for a few then enjoy!
