A Healthy Spinach Walnut Pesto Recipe.
I just love pesto! It’s so simple to make and can add big flavour to so many meals. Add it to pasta for dinner, throw it on top of veggie soup, spread it over bread for sandwiches, or add a spoonful to roasted vegetables. There’s just so many delicious ways to enjoy it.
Plus it’s the easiest thing to make, all you need to do is blend the ingredients together! Not to mention that this is so healthy and nourishing for the body and skin. Such and easy way to get in some greens. I served mine with brown rice pasta, courgette and some more chopped walnuts and it was so delicious and satisfying. Simple meals are the best!
- 2 packed cups of spinach
- 1/3 cup olive oil
- 1 or 2 medium cloves of garlic
- Juice from 1 lemon
- 1 cup walnuts
- 1/2 teaspoon sea salt
- Combine spinach, walnuts, and garlic in a food processor and pulse until the mixture turns into a course meal.
- Slowly add olive oil in a steady drizzle as you continue to pulse the ingredients. Process until it reaches your desired consistency. I like mine to have a bit of texture, but if you prefer it smoother, pulse a few more times.
- Season with salt.
- Use immediately or store in the refrigerator for later use.
