Healthy Tomato Basil Bruschetta

Healthy and Easy Tomato Basil Bruschetta for a delicious lunch or brunch

I featured this delicious Bruschetta recipe on my first What I Eat in a Day YouTube video, you can watch that here. This has been my go to for lunch recently. It’s delicious, satisfying and full of so much goodness.


It’s also super easy and quick to make! I chopped up some fresh tomatoes I had, chopped up some onion, threw a handful (or two) of basil, added some mixed herbs drizzled a bit of olive oil and salt and it was done.

Healthy Tomato Basil Bruschetta

I used sourdough bread, but you can use your favourite. I grilled this on a griddle pan until golden brown and then topped with the tomato mixture, so yummy!

I like to make a bigger batch so I can easy put this together during the week.

Recipe- Healthy Tomato Basil Bruschetta for a delicious lunch or brunch

Ingredients

  • 2 slices bread
  • 4 tomatoes
  • 1/2 cup basil
  • pinch pink salt
  • 1/2 tsp mixed herbs
  • 2  tbsp olive oil
  • 1/2 red onion

Method

  1. Chop tomatoes, basil and red onion and place in a bowl
  2. Add the olive oil, salt, and mixed herbs and mix well
  3. Place your toast on a griddle pan and grill both sides until golden brown
  4. Add your toppings and enjoy!!
