Peanut butter Vegan pancakes. Super fluffy and light, served with melted peanut butter. Vegan + Gluten Free.

Today I am sharing my second vegan pancake recipe. You can find my first lemon poppy seed vegan pancake recipe here.

For me, the weekends are for pancakes. After the rush of the working week, I love to take my time in the mornings and savour my breakfast. Catching up with Marius and getting excited about our plans.

I love pancakes and like to experiment with different flavour combinations and textures. This one is a winner. Fluffy, light and with peanut butter, what’s not to love? I used crunchy peanut butter in the pancake mix giving it some bite and served with smooth melted peanut butter, heavenly!

But these aren’t the typical pancakes. Although they taste amazingly delicious, these are good for you!

I adore peanut butter, such a great way to get in your protein and fats if like me your not a big meat eater. Plus it keeps you nice and full for hours. I also used gluten free oats which is hands down my favourite grain, I could eat oats all day! They contain lots of fibre, provide so much energy and never leave me feeling sluggish.

In fact oats are a total beauty food! They have many beautifying properties such as biotin. Biotin not only helps to boost your metabolism and digestion, it also keeps your hair, skin, and nails healthy. One cup of oats contains 50% your recommended daily allowance of Biotin!

These are simple to make too, just one bowl and 15 minutes. You can even make a large batch and freeze for the week ahead.

Peanut Butter Vegan Pancakes


  • 1 flax egg /chicken egg
  • 1 Tbsp coconut oil
  • ½ cup milk
  • 1 Tbsp agave nectar 
  • 1 Tbsp natural salted peanut butter (crunchy or creamy), plus extra for topping
  • 3/4 cup oat flour


  1. Mix the dry ingredients in a bowl
  2. Add the wet and stir to combine
  3. Heat a pan over medium heat and add a little coconut oil if needed
  4. Pour a bit of the mixture in to the pan and cook for a few minutes until golden brown, then flip to cook the other side.
  5. Repeat until all the mixture is used.
  6. Top as you wish
