A simple cashew pasta sauce for a delicious dinner or lunch. I was craving some comfort food over the weekend. All I wanted was a cosy plate of creamy pasta! So I made this cashew pasta sauce and was so happy with the results.
This recipe is really simple to make, you simply soak the cashews for a few hours and then place all ingredients into a blender until thick and creamy. It combines healthy fats, protein and carbs and is so warming and satisfying.
I use brown rice pasta to make it gluten free. In my opinion this tastes just like wholewheat pasta and has the same texture. If your looking for an alternative to wheat flour pasta then I highly recommend it.
I served my Pasta with peas and lemon wedge, so good!

Recipe- Quick and Simple Cashew Pasta Sauce for a delicious and comforting dinner
- 2 cups cashews
- 1¼ cup water or broth
- 1-2 cloves garlic
- 1 teaspoon salt
- 1 tbsp mixed herbs
- Pasta, of your choice (I used brown rice pasta)
- Place cashews in a bowl. Cover with water and soak for about 2 hours. Drain and rinse thoroughly.
- Place soaked cashews in the bowl of a food processor or blender with the water, mixed herbs garlic, and salt. Puree until very, very smooth. Thin out with more water to desired consistency.
