Baked Sweet Potato with Avocado Mash and Black beans Recipe for a nourishing lunch or dinner.
I love making baked sweet potatoes for a quick and easy lunch or dinner. So easy and quick to make and full of so much nourishment. You can top them with so many things, depending on what you feel like. This time I added avocado mash with black beans, red pepper and spinach. So delicious!
Unlike regular potatoes, sweet potatoes actually count as one of your five-a-day. They’re naturally sweet-tasting and they won’t disrupt your blood sugar levels.
This recipe is vegan and gluten free.
Recipe- Baked Sweet Potato with Avocado Mash and Black beans
- 2 sweet potatoes
- 1 large avocado
- juice 1/2 lemon
- 1/2 can black beans
- 2 cups spinach
- 1 red pepper
- chilli flakes
- pink salt
- black pepper
- Heat oven to 200C/390f wash the sweet potatoes, then put them straight on the oven shelf and roast for around 45 mins or until cooked through
- Whilst the potato’s are baking mash the avocado with the lemon juice in a small bowl, then stir in the chilli flakes, salt and pepper
- Add the spinach, red pepper and black beans to a pan and saute for a few minutes
- Cut the potatoes in half and top with the beans, spinach and red pepper mixture then top this with the avocado mash
