These lemon muffins are my favourite way to welcome the sunny weather we’ve been having in the UK. They’re soft, light, and full of lemon, and are made up of all natural, healthy ingredients.

I love turning my favourite desserts into a healthy recipe that I can enjoy guilt free. Greek yoghurt makes these fantastically light and moist. The oat flour packs in the fibre, leaving you full and satisfied! Coconut sugar is a great alternative to regular sugar and will satisfy your sweet tooth without the crash later in the day. Butter is replaced with coconut oil. These are incredibly healthy and nourishing without compromising on flavour or taste.
