Watermelon has been hands down my favourite summer fruit this summer! You can enjoy it so many ways and it always hits the spot. This time I wanted to make a refreshing smoothie that was full of flavour but light and low on calories, so I could make a huge pitcher and enjoy throughout the day.
Containing only four ingredients this is so quick to whip up and enjoy. Tastes like summer in a cup!
More like a slushie in texture, I added strawberries and mint for more flavour. The combination is perfectly sweet without the need for any added sugars. Plus between the mint and the watermelon, you can instantly feel the cooling effect it has on the body.

Watermelon: n fact the high water content provides fat burning properties and helps your metabolism work more effectively. Watermelon also contains vitamin c, pantothenic acid, copper, biotin, potassium, vitamin and vitamin b1. Making it great for your overall health and immune system
Mint: Promotes digestion. It also soothes stomachs or inflammation.
Strawberries: Are rich in antioxidants, vitamins, and minerals that contribute to overall health. These include folate, potassium, manganese, dietary fiber, and magnesium. It is also extremely high in vitamin C!

- handful of mint leaves
- 2 cups chopped watermelon
- 1 cup water
- Place all ingredients in a blender and blitz until smooth
