Vegan Rice Pudding

There’s something about a hot steaming bowl of rice pudding that screams indulgence and comfort. One of my favourite desserts when I was younger, this is a healthy take full of goodness that doesn’t compromise on flavour. The perfect gluten free and vegan dessert.

Healthy vegan rice pudding is so creamy and satisfying, it’s a total comfort food.  One of those easy desserts that can be made with just a few ingredients and catered to your taste. Cinnamon raisin and apple? Maple syrup and berries?


Perfect for dessert and healthy enough for breakfast, the fibre content will keep you full all day.

Most people have tried rice pudding but it tastes even better when it’s home made and completely guilt free.  This recipe is both vegan and gluten free.  I used full fat coconut milk to ensure that that it would be creamy as possible and it resulted in a really lovely soft texture.

I had mine with warmed mixed berries and maple syrup but feel free to add your own topping depending on your cravings. Also amazing with banana and dark chocolate. Yum!

Instructions
  1. Pour coconut milk into a small pot over medium-high heat. Bring to a simmer. Add maple syrup and rice and stir until combined.
  2. Leave to simmer for five minutes, the mixture will become creamier and thicker. Add the rest of the ingredients and stir until combined.
  3. Add your toppings of choice and enjoy. Can be served warm or cold
