Walnut, Raisin and Apple Cake Recipe

This apple cake recipe is so easy to make and it’s also 100% healthy! It’s completely refined sugar-free, dairy-free, grain-free and gluten-free. I hope you enjoy it as much as I do!

Walnut, Raisin and Apple Cake Recipe


Recipe- Walnut, Raisin and Apple Cake. Paleo, Gluten Free and Vegan

Ingredients

  • 1 + 1/2 cups packed thin apple slices
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 1 cup +3 tbsp cup almond flour
  • 2 tablespoons coconut flour
  • 1/3 cup maple syrup
  • 1/2 cup coconut oil (melted)
  • 3 chia eggs
  • 2 teaspoons cinnamon
  • pinch nutmeg

Method

  1. preheat the oven to 180c/340 F
  2. core the apples and slice into thin slices
  3. mix the eggs, pure maple syrup, almond flour, coconut flour, vanilla, cinnamon, and nutmeg together in a bowl
  4. add the melted coconut oil and mix until well blended
  5. add the apple slices, chopped walnuts and raisins to the bowl and gently mix them into the batter
  6. pour the pie batter into a prepared cake tin and spread the batter evenly with a spoon
  7. place in the oven and bake for 30 to 35 minutes
  8. once cooked, remove from oven and leave to cool for a few minutes
  9. slice and serve
  10. enjoy warm & fresh out of the oven… or save a few slices for later (both are good!)
