 I love spending a bit more time making breakfast on the weekends. When there is less of a rush to get out of the door, I can take my time and make something a bit fancier then my usual porridge. My favourite things to make are crepes and pancakes, with all of my favourite toppings.
Recently I purchased this waffle maker and it has taken my weekend brunch up to a whole new level! I pretty much went waffle crazy and made vegan waffles 3 days in a row when I got it and have got lots of flavour combinations coming up!

I’m pretty proud that I nailed these 3-ingredient vegan Waffles on the first try. These beauties were my first waffle recipe ever. They come out perfect every time, fluffy on the inside, crispy on the outside.
 Try this tasty, super healthy recipe out for some delicious, gluten free, vegan waffles that are high in protein and low in sat fat. They’re the perfect way to kick start your day and keep you full until lunch time. With only 3 ingredients this recipe couldn’t get any easier.

 What’s so great about these vegan waffles is that they pack lots of protein giving you a great energy boost to tackle the day ahead and also make a really effective workout mini-meal. The fat content is rich in healthy, fatty acids thanks to the Flax Seed powder, which also gives you a nice fibre boost to keep your digestion regular. Bananas are high in slow-release carbohydrates, as well as being one of your 5 a day! This oatmeal waffle recipe really is a great way to start the day.
This vegan waffle recipe is the perfect base for all your favourite toppings, I like to mix mine up depending on what I am craving that day.
These are so soft and fluffy on the inside with a golden crispy crust and wonderfully sweet flavor. They are a quick breakfast to make on the spot or to meal prep and stock them in the freezer. Simply place your fluffy waffles in a freezer proof bag.

To make these 3 ingredient banana oat waffles you will need:

  • oats- rolled oats or quick oats will both work  (use certified gluten-free oats to make gluten-free waffles) can sub for buckwheat flour, or spelt flour. May need to add a splash of almond milk if the batter is too dry. Alternatively, use white flour or all purpose flour. Whole wheat flours will work too.
  • banana
  • eggs – flax, chia or normal eggs will all work

  1. First add all ingredients to a blender or food processor and blend until smooth
  2. Warm up your waffle machine and pour in your waffle batter
  3. Cook until the waffles are golden brown and cooked through
  4. Add your favourite toppings and enjoy

Banana Waffles 3 Ingredients Recipe Substitutions

These healthy banana waffles contain no egg, you can sub the chia eggs for flax eggs or normal eggs if you don’t need this recipe to be vegan.

The oat flour can be subbed for coconut flour, almond flour or all purpose flour however this will change the taste and texture of the waffles. Depending on what flour you use you may need to add more or less liquid to the batter.

If you want to make waffles without banana, you can try using the same amount of mashed sweet potato or apple sauce. I have tested with both and loved the results.

How to store banana Waffles 3 Ingredients Recipe

You can store the leftover healthy banana waffles in an airtight in the fridge container for up to 4 days. Simply warm up for a minute in a toaster before serving.

Healthy banana waffles can also  be frozen for up to 1 month in zip-lock bags. Make sure to thaw the waffles the day before you want to eat them and rewarm them in a hot waffle iron for 1 minute or in a bread toaster.

You can also use this batter to make pancakes. Just add some melted coconut oil or cooking spray to a pan and add 2 tbsp per pancake, cook on each side before flipping.

Ingredients
  

  • 1 cup rolled oats (use gluten free is needed)
  • 2 medium bananas chopped
  • 2 chia eggs (normal eggs work too)

Your favourite toppings, This is where you can have fun and throw whatever you fancy on top; it would taste great sweet or savoury!

    My favourites are -

    • Fresh fruit
    • maple syrup
    • peanut/almond butter
    • coconut yoghurt
    • nuts and seeds

    Instructions
     

    • Place all the batter ingredients in a blender and blend until smooth.
    • Heat a waffle maker and pour in a few tablespoons of batter.
    • Cook until the waffles are golden brown and cooked through.
    • Carefully remove the waffles and serve with toppings of your choice.
