These healthy Strawberry Oat Jam Bars have a crumb topping and they are made with all vegan and gluten-free ingredients. They make an amazing snack or dessert.
Filling and satisfying, they’re vegan, gluten-free, dairy-free, and refined sugar free! These Strawberry Jam Oat bars are really easy to make too.
The texture of these is perfect, chewy but soft in the centre. They have an oaty base, a strawberry jam centre and a crumb topping. So delicious!
They work as a breakfast bar, afternoon snack or any time sweet treat.
Strawberry Oat Jam Bars Ingredients
You just need the following simple ingredients to make oatmeal jam bars
- Cashew butter – almond butter or creamy peanut butter will also work
- Maple syrup – can be subbed for agave or honey. Have not tested with coconut sugar, light brown sugar or any other granulated sugars
- Coconut oil – can use butter instead
- Almond flour – this is almond that have been blitzed into a flour using a food processor, can be subbed for all purpose flour, oat flour or whole wheat flour
- Cinnamon
- Strawberry Jam
- Oats – instant oats or steel cut oats both work
Optional – add 1 tsp of vanilla extract or almond extract for extra flavor
You can use any kind of jam to make these bars. Choose whatever flavor jam you like. From apricot jam to fig jam, any fruity jam will be delicious.
How to Make Strawberry Jam Oat Bars

- Preheat your oven to 350f/175c and prepare a square baking pan with parchment paper
- Mix together the wet ingredients – cashew butter, maple syrup and coconut oil in a large bowl
- Add in the remaining dry ingredients- almond flour, cinnamon and oats mixing well until you form the dough
- Spread 2/3 of the oat mixture into the baking dish, pressing down firmly to make an even layer, this is the bottom crust
- Bake in oven for 10 minutes and set aside the remaining crumb mixture for later
- Evenly spread a thick layer of jam onto the crumble layer, sprinkle remaining mixture on top of the jam
- Bake in oven for 25 minutes until golden brown on top
- Allow the bars to cool completely and place in fridge for 10 minutes before slicing
- Store your oatmeal bars in fridge in an airtight container, they will go soft at room temperature

Ingredients
- 1/3 cup creamy cashew butter any nut butter will work
- 5 tablespoons maple syrup
- 1/3 cup softened coconut oil not in liquid form!
- 1 3/4 cup almond flour
- 1 1/4 cup organic rolled oats GF if necessary
- 1/2 teaspoon cinnamon

Instructions

- Mix together the cashew butter, maple syrup and coconut oil in a large bowl
- Add in the remaining crumb layer ingredients- almond flour, cinnamon and oats mixing well until you form the dough
- Spread 2/3 of the bar dough into the baking dish press down firmly to create an even layer
- Bake in oven for 10 minutes and set aside the remaining crumb mixture for later
- Evenly spread the jam onto the crumb layer, sprinkle remaining crumbs on top
- Bake in oven for 25 minutes until golden brown on top
- Allow the bars to cool and place in fridge for 10 minutes before slicing
- Store in fridge
