Gluten Free Blueberry Lemon Zest Muffins for a healthy and delicious snack
I have been completely obsessed with making these gluten free blueberry lemon zest muffins. They are perfect to make on a Sunday, as meal prep for the week ahead. I love making sweet treats like this to have on hand for healthy snacking!


These are perfect for grabbing on the go, for mid morning and afternoon pick me up, breakfast or even dessert. They are full of protein, fibre, healthy carbs, antioxidants and vitamin c for a healthy boost when you need it.


They are really easy to make to! From start to finish they are ready in 20 minutes!

Recipe- Gluten Free Blueberry Lemon Zest Muffins for a healthy and delicious snack
Ingredients
- 1 1/2 cups buckwheat flour
- 1/4tsp baking soda
- 1/2tsp baking powder
- 1 lemon, juiced + zest of 1 lemon
- 1egg
- 1banana, mashed
- 2 tbsp maple syrup
- 1/2 cup almond milk
- 1/2 cup blueberries (fresh or frozen will work)
Method
- Preheat the oven to 350 f/175 c
- Prepare a muffin tin and set aside
- Combine all dry ingredients in a bowl.
- In a separate bowl, combine all wet ingredients except for the blueberries.
- Add wet ingredients to dry ingredients and stir to combine
- Gently fold in the blueberries.
- Transfer batter to muffin tin
- Bake for 15-20 minutes or until a toothpick comes out clean
- Leave to cool completely before enjoying
