This mug cake was born out of a blueberry muffin craving. Instead of making a huge batch I came up with a blueberry muffin mug cake that would fill me up and energise me for the busy day ahead. It turned out so delicious and I love how quick and easy it is.
This healthy mug cake is vegan, gluten free, healthy and kid friendly!
So what exactly is a mug cake?
A mug cake is exactly as it sounds. A single serving cake you cook in a mug in your microwave. I used little ramekins as they make for prettier pictures. Any small microwave safe container will work though!
What you need to make blueberry banana bread mug cake:
To make this banana bread in a mug you need:
- oat flour
- coconut sugar
- chia egg
- banana
- plant based milk
- blueberries
How to make blueberry banana mug cake
This healthy banana mug cake mug cake is made in a microwave, you can also make it in the oven though. I have included the method for both:

In a small mixing bowl, combine the oat flour, coconut sugar and cinnamon and mix together.

Then add your egg, mashed banana, plant based milk and mix until fully combine.

Then fold in the blueberries, keep a few aside to add on top

Transfer the mixture to a mug or ramekin and add the remaining blueberries

Microwave for 50 seconds and carefully remove (the mug will be really hot).

Pour the mug cake batter into a small oven safe dish and bake at 350/175c for 12 minutes, or until a toothpick comes out clean.
Blueberry Banana Bread Mug Cake Sustitutions
You can sub the oat flour for buckwheat flour, sourgum flour, spelt flour and quinoa flour. You can try other flours but the texture will come out differently.
The coconut sugar can be subbed for any granulated sugar. The dairy-free milk for cows milk and the chia egg for a normal egg.
Instead of using blueberries you can try chocolate chips, raisins, other berries or nuts.

Blueberry Banana Bread Mug Cake
Ingredients
- For a single serving
- 3 tbsp oat flour
- 2 tbsp coconut sugar (optional)
- 1 chia egg/ egg
- pinch cinnamon (optional)
- 1/2 mashed banana
- 1 tbsp dairy free milk of choice
- 2-3 tbsp frozen blueberries
Instructions
- For the microwave version
- In a small mixing bowl, combine the flour, coconut sugar and cinnamon and mix well.
- Add in your egg, mashed banana, dairy free milk and mix until fully incorporated. Fold in the blueberries and ensure there are a few remaining at the top.
- Transfer the mixture to a mug or ramekin
- Microwave for 50 seconds (or up to 2 minutes, depending on your microwave) and remove.
- For the oven version
- Pour batter into an oven safe dish and bake at 350/175c for 12 minutes, or until a toothpick comes out clean.
