These 4-ingredient Healthy Buckwheat Vegan Pancakes are fluffy, delicious, hearty, and filling. They’re super easy to make and and only require 15 minutes from start to finish. And just to make them even better, these pancakes are refined sugar free, high fibre, high protein, gluten free, dairy free, and vegan too!
WHAT’S BUCKWHEAT FLOUR?
Buckwheat flour is made from ground buckwheat seed. Buckwheat flour has an earthy and slightly nutty flavour.
It is high in fibre, naturally gluten free and is lower in carbs than other regular flour.
They make an ideal breakfast, brunch or dessert! I topped mine with banana, almond butter and more maple syrup.

Buckwheat Vegan Pancakes Ingredients
To make these healthy vegan pancakes you will need:
- Buckwheat flour
- Almond Butter
- Almond Milk
- Maple syrup

1. Mix the wet ingredients
In a bowl mix together the wet ingredients – the almond milk, maple syrup and almond butter.
2. Add in dry
Add the flour into the bowl and mix until combined with no lumps.
3. Cooking buckwheat vegan pancakes
These easy buckwheat vegan pancakes are cooked in a warm non-stick pan.
This ensure the pancakes don’t stick to the pan, and it makes them easier to flip.
Warm your non-stick pan over a medium heat.
Instead of adding oil directly tho the pan, using a piece of absorbent paper that has been dipped in coconut oil, and rub onto the pan surface for even distribution.
Alternatively you can use an oil spray, you will need to spray the pan again for each pancake.
4. Flipping
Add around 2 tablespoons of batter to your pan and cook the pancakes over low-medium heat until they start to bubble. Then gently flip and repeat until you have used up all your mixture.
5. Toppings
Add your desired toppings and enjoy!!
Fluffy Vegan Buckwheat Pancakes Recipe Substitutions:
You can sub the buckwheat flour for other types of flour but may need to add more or less liquid depending on what flour you are using. Read this post to find out the best buckwheat flour substitutions.
You can sub the almond butter for any nut butter. Cashew butter would work well as it has a mild flavour. Peanut butter would work well and has a stronger flavour.
The almond milk can be subbed for any plant based milk or cows milk if you don’t need this recipe to be vegan.
If you want to make pancakes without milk then sub for water. This will result in a different texture though.
The maple syrup can be subbed with any liquid sweetener such as honey or agave.

Buckwheat Vegan Pancakes Recipe (only four ingredients).
Ingredients
- 1 cup buckwheat flour
- 2 tbsp maple syrup
- 1 cup almond milk
- 1 heaped tbsp almond butter or any nut butter
Instructions
- In a bowl, combine all wet ingredients: almond milk, maple syrup, and almond butter. Whisk everything together until combined
- Add the flour and stir until fully combined
- Heat up a frying pan on a medium heat and add oil
- Add about 2 tablespoons of the pancake mixture per pancake. Cook until the pancakes start to bubble then flip gently
- Fry until nicely browned on the other side and serve.
- Add your favourite toppings and enjoy
