I wouldn’t recommend freezing due to the delicate nature of the cereal.
How to Make Easy Rice Crispy Cakes
First we mix the wet ingredients together by mixing the maple syrup, cocoa and nut butter
Then we melt this mixture in a saucepan on a low heat or in a microwave
Then we add the cereal and mix until everything is well coated.
Transfer to baking sheet prepared with parchment paper and pat down firmly with a spatula. Add any desired toppings
Freeze for 1-2 hours before slicing
Keep left overs in the fridge in an airtight container
Easy Rice Crispy Cakes Substitutions
You can sub the crispy rice cereal for cornflakes or any shredded cereal. The cashew butter can be subbed for any nut butter such as cashew or almond butter.
The maple syrup can be subbed for any liquid sweetener such as agave or honey if you don’t need this recipe to be vegan.
You can also make these without the cocoa, and add some mini marshmallows and vanilla extract to mix it up.

- 3 cups Nature's path crispy rice puffs
- 1/2 cup nut butter of choice (I used cashew)
- 1/2 cup maple syrup
- 1/4 cup cocoa
- optional - chocolate chips for topping
- Mix your cashew butter (or other nut butter of choice), maple syrup, and cocoa.
- Melt (either in the microwave or stove), then pour over the cereal and stir very well, making sure to coat all the crispies.
- Line a pan with parchment paper and spread the mixture evenly into the pan.
- Using the back of a spatula press down as firmly as you can. Top with chocolate chips if using
- Freeze for at least one hour before slicing
- Keep refrigerated
