Vegan Muffin Recipe Ingredients
- Flax eggs – (eggs made from flax seeds) normal eggs, egg replacer or chia eggs will also work
- Coconut yogurt – any dairy free yoghurt or greek yoghurt will work
- Vanilla extract
- Almond flour – can sub this and the flour for all purpose flour or whole wheat flour
- Oat flour – Can be subbed for chickpea flour
- Maple syrup – any liquid sweetener will work such as agave or honey
- Baking powder
- Almond milk – Can sub for any plant based milk such as soy milk, coconut milk, oat milk or cows milk
- Coconut sugar – Can be subbed for any granulated sugar, brown sugar or white sugar would work well
- Mixed berries – Can sub for any fruit, dried fruit or chocolate chips
How to make delicious muffins
You just need to follow the simple steps below to make these vegan breakfast muffins. Full recipe details can be found in the recipe card at the end of this post.

preheat oven to 350f/175c and prepare a muffin tray with muffin cases

mix all the wet ingredients together in a large bowl.

add dry ingredients in until combined with the wet.

fold in the berries.

transfer the muffin batter to your muffin tin and bake for 30 minutes

leave to cool completely before enjoying

How to Prepare Muffin Pan
The best way to grease muffin tins is to use melted butter (vegan butter will work too) and a pastry brush.
You can also use a a paper towel and dip it in the butter or designate an unused and washed paint brush for use in the kitchen. You can also grease with coconut oil or olive oil.
Alternatively you can always try a silicone muffin pan.

- 3 flax eggs (normal eggs will work too)
- 1 cup of coconut yogurt
- 1 tsp vanilla extract
- 1/4 cup almond flour
- 1 cup oat flour (gluten free is necessary)
- 1/3 cup maple syrup
- 1 tsp baking powder
- 2 tbs almond milk
- 3/4 cup of coconut sugar
- 1 cup mixed berries (I used blueberries, raspberries and blackberries)
Instructions
- preheat oven to 350f/175c and prepare a muffin pan
- mix all the wet ingredients together in a large mixing bowl.
- add dry ingredients in until combined with the wet.
- fold in the berries.
- transfer the muffin batter to a prepared muffin tin with muffin liners or greased with coconut oil or olive oil and bake for 30 minutes
- leave to cool completely before enjoying
