Easy chocolate protein muffins. They are rich, delicious, and completely satisfying. A perfect on-the-go breakfast or post-workout snack.

Chocolate Protein Muffins (Vegan + Gluten Free)

These are my go-to muffins when it comes to grabbing something quick. They make a great on the go breakfast, dessert, snack or post workout snack. They are loaded with protein and fibre, with 6.4 grams of protein per serving. They are rich, delicious, and completely satisfying.

I usually bake a big batch to meal prep on the weekend and enjoy them during the week.

I use pea protein powder as I find this to be the best protein powder, however I have made these vegan chocolate protein muffins with different protein powders and they came out perfect every time.

Double Chocolate Protein Muffins Ingredients

You need these simple ingredients to make these high protein chocolate muffins.

  • buckwheat flour – can sub for oat flour, almond flour, whole wheat flour  or all purpose flour
  • no added sugar vanilla protein powder – I use vanilla pea protein powder any vegan protein powder or whey protein powder will work can also use chocolate protein powder (I would add some vanilla extract if you do this)
  • unsweetened cocoa powder
  • baking powder
  • baking soda
  • maple syrup – any liquid sweetener such as honey or agave will work
  • almond milk – any plant based such as coconut milk or soy milk, cows milk will work too
  • ripe bananas – can sub for flax egg, dairy-free yogurt or greek yogurt but will need to use a touch more maple syrup
  • coconut oil
  • dark chocolate chips

How to make Chocolate Protein Muffins

  • Preheat oven to 180 celsius. Grease a muffin pan or place muffin paper liners in a muffin tin. Set aside.
  • In a medium bowl, whisk together the dry ingredients – flour, protein powder, cocoa powder, baking soda, baking powder and set aside.
  • In a large bowl, combine the wet ingredients – maple syrup, coconut oil, banana,  and milk. Mix flour mixture to wet mixture and use a fork to combine.
  • Scoop muffin batter into prepared muffin cups. About 3/4 full. Top each muffin with the chocolate chunks. Bake at 180 celsius for 25 minutes or until a toothpick comes out clean. Let cool for 5 minutes before serving.
  • Store your protein muffin recipe in an airtight container at room temperature

Ingredients
  

  • 1 3/4 cups buckwheat flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup maple syrup
  • 1 cup almond milk
  • 1 ripe banana mashed
  • 1/2 cup coconut oil

Optional Topping

  • 1/4 cup dark chocolate chunks

Instructions
 

  • Preheat oven to 180 celsius. Grease the muffin pans or place muffin liners in a muffin tin. Set aside.
