The coconut oil can be subbed for butter. Or any other oil. I love using coconut oil in these as you can’t taste it in the final product.

The maple syrup can be subbed for any liquid sweetener such as agave or honey if you don’t need this recipe to be vegan.

The flax eggs can be subbed for chia eggs or normal eggs. The peanut butter can be subbed for any nut butter. Almond or cashew butter will work really well as they both have a mild taste.

The almond milk can be subbed for or plant based milk or cows milk.

The buckwheat flour can be subbed for any gluten four blend however you may need to use more or less liquid depending on what you need. If you don’t need these muffins to be gluten free then you can use all purpose flour.

You could really go crazy with add-ins here and add in anything that you fancy. . From chocolate chips, blueberries, chopped dried cranberries , crystallized ginger and chopped nuts like pecans or walnuts.

Healthy Banana Muffins Recipe

Just a few minutes are needed to make these Healthy Banana Muffins. They’re light, fluffy and contain no refined sugar.

Ingredients
  

  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 tbsp peanut butter (any nut butter will work)
  • 2 flax eggs
  • 3 medium mashed bananas
  • 1/4 cup almond milk (any milk will work)
  • 1 vanilla bean (seeds scraped)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 3/4 cups buckwheat flour
  • 1/3 cup oats (plus more for sprinkling on top (I used gluten free))
  • banana slices for topping

Instructions
 

  • Preheat the oven to 330/165 c and prepare your muffin tray with muffin cups
  • In a small bowl add the coconut oil, flax eggs and agave syrup and mix well. Then add the mashed banana, peanut butter, almond milk, and vanilla bean and stir to combine.
  • In a separate bowl combine soda, cinnamon, buckwheat flour, and oats
  • Combine the two mixtures together, it will be a little bit lumpy
  • Divide the batter between the muffin cups
  • Sprinkle the tops with a some oats and top with banana slices if you wish
  • Bake for 30-35 minutes until a toothpick inserted into the centre comes out clean
  • Leave to cool completely before enjoying
