Healthy raspberry gluten-free scones Ingredients:

You need the following basic ingredients to make gluten free vegan scones.

  • buckwheat flour – can use a gluten free flour blend or all purpose flour if you don’t need this recipe to be vegan
  • coconut sugar – can use any granulated sugar such as brown sugar or cane sugar
  • coconut oil – needs to be chilled not room temperature, can also use chilled cold butter
  • baking powder
  • flaked almonds – for the top of the scones
  • almond milk – any dairy free milk such as oat milk, soy milk or vegan buttermilk. Cows milk will work too
  • raspberries – you can use any fresh fruit
  • almond extract
  • flax egg – can use a chia egg, egg replacement or normal egg

Variations

Almond flour – switch out some of the flour for almond flour for more protein a more intense almond flavor

Zest – add some lemon zest and lemon juice for a tangy flavor

Vanilla – add some vanilla extract for added flavor

Glaze – make a lemon glaze to top with

Different fruit – mix up the fruit, add some blueberries for gluten free blueberry scones

How to make raspberry gluten free vegan scones

Step-by-step instructions can be found in the recipe card at the end of this post.

  • First preheat your oven and prepare a baking tray
  • Combine all your dry ingredients together in a large bowl
  • Add the chilled coconut oil (must e chilled not melted) and cut into the dry ingredients, you can use a fork or pastry cutter
  • Add your wet ingredients – almond milk, flax egg and almond extract and mix that in
  • Gently fold in the raspberries
  • Kneed the dough and roll into a 1 inch circle
  • Sprinkle with flaked almond and cut into 8 scones
  • Transfer to a baking tin lined with parchment paper
  • Bake until golden brown and enjoy!
  • Store your perfectly flaky scones in an airtight container

Raspberry Almond Gluten Free Vegan Scones

Only one bowl and 8 simple ingredients are needed to make these healthy raspberry almond scones. Filled with fresh raspberries, they are ready in only 20 minutes!

Ingredients
  

  • 1 flax egg
  • 3/4 cup almond milk
  • 2 cups buckwheat flour
  • 1 Tbsp baking powder
  • 1/4 cup coconut sugar plus more for topping
  • 6 tbsp chilled coconut oil
  • 1/2 cup raspberries
  • sliced almonds for sprinkling
  • 1 tsp almond extract

Instructions
 

  • Preheat oven to 400f/200c degrees and line a baking tray with parchment paper
  • Combine dry ingredients and mix well
  • Add the chilled coconut oil and cut into the dry ingredients. I used a fork to do this
  • Stir in the nut milk, flax egg and almond extract and gently mix (not too rough)
  • Gently fold in the raspberries
  • Knead the dough a few times then add to a floured surface and roll out into 1 inch thick circle
  • Sprinkle with flaked almonds and then slice into 8 scones and transfer to baking sheet
  • Bake in oven for 10-12 minutes until golden brown
