Chia pudding is so quick to make and can be prepared ahead of time for when your in a rush. It makes a filling breakfast, refreshing snack or a healthy dessert.  Make a big batch and then enjoy throughout the week.

Chia seeds may be small but they are packed full of nourishing goodness. Loaded with fibre, plant protein, Omega-3 fatty acids and essential nutrients.

Chia seeds don’t really have much of a taste which makes it versatile. So you can put in your own toppings and create the flavour you like.

For this one I used fresh ripe mangoes, fresh ripe mangoes and shredded coconut for a tropical twist and it tastes just like summer. Perfect to enjoy on a hot summer day. Although feel free to use any fruit you like and you can sub the coconut milk for a milk of your choice.

Chia Seeds – are packed with essential nutrients, including fiber, protein, excellent source of omega-3 , essential amino acids, vitamins (such as B vitamins), healthy fats, and minerals (like calcium, magnesium, and phosphorus).

Mango – are rich in essential nutrients, including vitamins A, C, E, and K. They also contain minerals such as potassium and magnesium. The potassium content in mangoes can help regulate blood pressure levels, and the fiber content may contribute to lower cholesterol levels, supporting cardiovascular heart health.

Plus this is a healthy recipe you can enjoy guilt free. It’s vegan, sugar free and gluten free!

This is also good for meal prep, simply store in an airtight container until next day when your ready to enjoy.

Ingredients For Mango Chia Pudding Recipe

You only need the following simple ingredients to make this mango chia seed pudding :

  • mango – you can use fresh mangoes or frozen mango chunks
  • full fat coconut milk – you can use any plant-based milk from soy milk, oat milk, light coconut milk or cashew milk
  • agave nectar syrup – can sub for maple syrup or honey
  • chia seeds
  • shredded coconut – optional

Toppings and variations

  • vanilla – add 1 tsp vanilla extract for extra flavor
  • unsweetened coconut flakes – sprinkle some on top of your chia pudding
  • fresh fruits – use this recipe as a base and mix up the fruits
  • extra mango – add extra fresh mango chunks on top of the blended mango

How to Make Mango Coconut Chia Pudding

  • Mix chia seeds, coconut milk, shredded coconut and agave in a medium bowl and give it a good stir for a few minutes and then let it stand for five minutes before stirring again. Transfer the chia seed mixture to a container or mason jars and leave for at least one hour to thicken up.
  • Blend the mango and water in a food food processor or high speed blender until you have a fresh mango puree
  • Pour the pureed mango over the chia mixture and leave to set in the fridge for at least two hours until your ready to enjoy. Top with your favourite toppings when ready to enjoy
  • Lasts 4-5 days in the fridge covered.

Mango Coconut Chia Pudding Recipe

An easy recipe to make sweet mango chia pudding for a delicious breakfast or dessert that is good for you!

Ingredients
  

  • 1 1/2 cup frozen mango
  • 1 cup water
  • 1/2 cup full-fat coconut milk (can sub for unsweetened almond milk or any non-dairy milk)
  • 2 tbsp agave
  • 1/4 cup chia seeds
  • 2 tbsp shredded coconut

Instructions
 

  • Mix chia seeds, coconut milk, shredded coconut and agave and stir for a few minutes and then let it stand for five minutes before stirring again. Transfer to your bowl or mason jar and leave for at least one hour to thicken up.
  • Blend the mango and water until you have a puree.
  • Pour this over the chia mixture and leave to set in the fridge until your ready to enjoy.
  • Lasts four days in the fridge covered.
