Tropical Coconut Overnight Oats for a delicious plant based and gluten free breakfast that is perfect for summer
These creamy coconut overnight oats are so perfect for summer. Especially when you top them with your favourite tropical fruits!
Breakfast like these are my favourite as they are not only super easy to make, but they taste amazing too. If like me, you like to have something sweet in the morning. Then you cant really go wrong with oats and fruit. This overnight oats recipe is so creamy and tastes just like dessert.
The creaminess comes from the coconut milk and yoghurt, I added shredded coconut too to add to the texture.
I topped mine with kiwi, mango, passion fruit and coconut flakes, but you can add anything you like. I also think raspberry chia jam would be amazing too.
This recipe is gluten free, dairy free, vegan and contains no refined sugar. I hope you enjoy.

Recipe- Tropical Coconut Overnight Oats for a delicious plant based and gluten free breakfast that is perfect for summer
- 1 cups gluten free oats
- 1½ cups coconut milk
- 1 tablespoons maple syrup
- 1/2 cup coconut yogurt
- ⅓ cup shredded coconut
- 1/2 tsp maca (optional)
- Mix all ingredients together in a bowl cover or transfer to a mason jar and leave in the fridge overnight
- The next day add you desired toppings and enjoy
