If you like to have something sweet in the morning for breakfast, then these cherry bakewell baked oats are perfect. They taste just like dessert!
In the oven, the top layer will get crispy and toasty, while the middle will stay soft. I’m still counting this as a breakfast recipe, but it’s also good for dessert. I like to serve mine with some coconut yoghurt!
The best part is they provide lots of feel good energy that will keep you full, thanks to a combination of healthy carbs, protein and fats. You can make this at the beginning of the week and it will last you three to four days.
Cherry Bakewell Baked Oats
This healthy cherry bakewell baked oats recipe makes for a delicious dessert or hearty breakfast! I love this cherry bakewell version, but, for a twist, swap in whatever seasonal fruit you like
Ingredients
- 2 tablespoons ground flax seed + 6 tablespoons warm water or two eggs
- 2 cups whole rolled oats
- ½ cup flaked almonds
- ¼ cup coconut sugar (any sugar will work)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ¾ cup almond milk
- ¼ cup maple syrup
- 3 tablespoons melted coconut oil
- 1 + 1/2 cup pitted frozen cherries
- 1 tsp vanilla extract
- 1 tsp almond extract
Instructions
- Preheat the oven to 350F/165c and spray an 8x8-inch (or similar) baking dish with cooking spray.
- In a small bowl, combine the flaxseed and warm water and set aside to thicken for about 5 minutes.
- Reserve 2 tablespoons of the almonds, set aside.
- In a large bowl combine the oats, the remaining almonds, and the baking powder, cinnamon, coconut sugar and salt.
- In a medium bowl, combine the almond milk, maple syrup and coconut oil, vanilla and almond extract and whisk to combine. Stir in the flaxseed mixture and blend until smooth.
- Pour the wet ingredients into the bowl of dry ingredients and stir to combine.
- Fold in the frozen cherries
- Transfer the mixture into the baking dish.
- Bake for 40-50 minutes or until the top is crisp and the middle is set. I find it easiest to wedge a knife in and make sure the middle has thickened nicely. Remove and let cool for 15 minutes before serving.
