Coconut Bread Recipe- Vegan, Gluten free and healthy

Coconut bread recipe that is healthy, vegan and gluten free. Full of fibre and low carb, this is completely unprocessed and simple to make. 

I’ve never been a bread person, I would always choose, rice, pasta or potatoes given the choice. Although I have always been a fan of sweet breads. I wanted to create a bread that was healthy, with no processed ingredients, that was also vegan and gluten free.

After experimenting with a few combinations and different flours, I created this coconut bread recipe and I admit I am totally hooked. The first time I made this, it was finished in under two days.  Spread with peanut butter and topped with banana I just couldn’t stop!

So it’s pretty good that this coconut bread is full of fibre and low in carbs and easy to digest due to the lack of gluten. Coconut oil gives a dose of health fats.

Plus this is so filling and will keep you energised all day without causing any bloating.  It has the perfect texture and tastes amazing as it is or even toasted.

Although this is a coconut bread, this isn’t sweet and can be used in place of regular bread. But feel free to add maple syrup to add sweetness if desired.

This is simple to make too, although it does involve a lot of stirring. Plus only seven ingredients are needed to make this.

Recipe – Coconut Bread Recipe- Vegan, Gluten free and healthy


  • ½ cup coconut flour, sifted
  • 2/3 cup buckwheat flour
  • 1 tsp baking powder
  • ½ cup coconut milk
  • 5 chia eggs or eggs
  • 2 tbsp melted coconut oil
  • 1 tsp pink salt


  1. Preheat oven to 180c
  2. Lightly oil a loaf pan with coconut oil.
  3. Combine the sifted coconut flour, buckwheat flour, baking powder and coconut milk
  4. In another bowl, whisk together the eggs, coconut oil and sea salt.
  5. Pour into flour mixture.
  6. Stir well to combine
  7. Transfer into loaf pan and bake at 180 for 35 minutes
  8. Remove from oven and allow to cool completely before enjoying

Do you use ground chia to make your egg and did you use coconut milk in can or the carton? I made this and it didnt rise and was wet so woud like to troubleshoot. Thanks

Hi Sarah, I don't ground the chia seeds to make the chia egg and I used coconut milk from a carton. I hope this helps!
