Apple vegan blondies! These are the perfect blondies to enjoy this autumn. What I love about this blondie recipe, is that it is a one-bowl recipe. Traditional apple bars are loaded with butter and sugar, but this recipe makes them a bit healthier and vegan just by swapping a few simple ingredients.

We’re using fibre-filled rolled oats and protein rich almonds instead instead of flour, and coconut oil instead of butter.

Vegan Blondies Recipe Substitutions

You can make the below substitutions in this vegan blondie recipe. Full recipe details can be found in the recipe card at the end of this post.

  • Apples – Can sub other fresh fruit, dried fruit or vegan chocolate chips
  • Oat Flour – Can be subbed for spelt flour (have not tested with purpose flour)
  • Coconut Oil – Can be subbed for plant based butter or regular butter
  • Maple syrup – Can be subbed for agave or honey
  • Coconut Sugar – Can be subbed for any granulated sugar, dark brown sugar would work well
  • Flax Egg– Can be subbed for chia eggs, egg replacer or normal eggs

Storing and Freezing Apple Vegan Blondies

  • To store: Apple vegan blondies need to be stored in an airtight container the refrigerator, they will keep up to two weeks. They will only last a few days at room temperature.
  • To freeze: Place blondies in a freezer safe bag and store in the freezer for up to 6 months.

Apple Vegan Blondies – These cinnamon-spiced vegan blondies are stuffed full of juicy apple chunks!Apple spice vegan blondie bars!

Ingredients
  

  • 2 apples chopped
  • 1 cup almond flour
  • 1/2 tsp cinnamon
  • 1/3 cup maple syrup
  • 1/2 tsp nutmeg
  • 1/4 cup coconut oil
  • 1/3 cup oat flour
  • 3 tbs coconut sugar (any granulated sugar will work)
  • 2 flax eggs (normal eggs will also work)
  • 1 tsp baking soda
  • 1 tbs vanilla extract

Instructions
 

  • preheat oven to 350 f/ 175 c
  • mix all the wet ingredients together in a large bowl.
  • add dry ingredients in until combined + chopped apples
  • add blondie batter to baking tray prepared with parchment paper
  • bake for 25 minutes.
