Cinnamon Swirl Healthy Muffins (vegan + gluten free). They’re moist on the inside and have a crumble cinnamon topping with a vanilla glaze.

These cinnamon roll healthy muffins and topped with sweet cinnamon crumble and vanilla glaze. If you can’t get enough of that cinnamon-y goodness this time of year then these muffins are for you.

Cinnamon Swirl Healthy Muffins (vegan + gluten free)
Ingredients
muffins:
- 1 1/2 cup oat flour (use gluten free oats)
- 1/4 cup coconut sugar
- 1 tsp cinnamon
- 2 tsp baking powder
- 3/4 cup almond milk
- 1/2 banana mashed
- 1/2 cup vegan butter melted
- 1 tsp vanilla extract
topping:
- 1/4 cup soft vegan butter
- 1/4 cup coconut sugar
- 1/4-1/2 cup oat flour ( use gluten free oats)
- 1 tsp cinnamon
glaze:
- 2 tbs soft vegan butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- splash of almond milk
Instructions
- Preheat oven to 350F/175C. Prepare a muffin pan and set aside
- Mix dry ingredients together in a bowl. Mix the wet ingredients in a separate bowl, then combine the two mixture. Make crumble topping by combing all ingredients with a fork
- place the batter into the muffin pan add the crumble topping then swirl in with a toothpick.
- bake for about 17 minutes until golden brown
- while muffins are baking, make glaze by combing all the ingredients. If you want it runny, just add more almond milk, if you like it thick, add less almond milk.
- Let the muffins cool completely before glazing.
