How to make vegan protein cookies?

These high-protein cookies are made with only 8 simple kitchen cupboard ingredients and a blender.

  1. First we preheat our oven to 180C (350F).
  2. Then we add all of the ingredients, except for the chocolate, into a food processor and blend together
  3. Combine the cookie dough ball with the chocolate and form 6 cookie shapes.
  4. Add the cookies to a cookies sheet and bake cookies in the oven for 12-15 minutes.
  5. Leave to cool completely and enjoy

If you use gluten free protein powder and chocolate chunks the yes these peanut butter protein cookies will be gluten free.

Does normal flour work in these vegan protein cookies?

I have not tested using a normal all purpose flour, but it should along with other flours such as, oat flour and almond flour. This would probably produce a cookie with better texture but the protein content would be lower.

As protein powder is more absorbent you will probably need to use less liquid if you are subbing for a different flour.

How to store vegan protein cookies?

Store your vegan protein cookies in an airtight container at room temperature.

Yes it’s 100% ok to bake protein powder. It works a bit differently to flour but you can easily make protein bars, cakes and cookies all using protein powder.
Protein powder can replace flour in lot of different baked goods recipes. It works particularly well in cookies and pancakes.
However protein powder works differently to flour. It’s a lot more absorbent to you will need to adjust your recipe to add more moisture.

  • 1 cup 90g oats (gluten free is necessary)
  • 1/4 cup 80g maple syrup (any liquid sweetener will work)
  • 1/4 cup 65g peanut butter (smooth works best)
  • 1 scoop protein powder
  • 1 tsp cinnamon
  • 1/4 cup 60-65ml almond milk (any milk will work)
  • Pinch of salt
  • 1/4 cup 40g vegan chocolate cut into chunks


  • Preheat your oven to 180C (350F).
  • Add all of the ingredients, except the chocolate, into a food processor and blend together till it forms a dough.
  • Chop up the chocolate into small chunks.
  • Combine the cookie dough with the chocolate and form 6 cookies.
  • Add the cookies to a baking tray lined with parchment paper and bake in the oven for 12-15 minutes.
  • Leave to cool completely before enjoying.
