Apple and Blackberry Overnight Oats

Overnight oats have become a go to breakfast for me, when I’m busy. All you need to do is pop everything in to a jar, mix together and leave it in the fridge and it’s ready to go in the morning, and you can even warm them up in the morning if you fancy. Plus it’s so easy to double or triple the recipe to make a few portions at once. Soaking the oats overnight makes them deliciously soft and the whole mix becomes so thick and creamy thanks to the chia seeds and coconut yoghurt. Recipe- Apple and Blackberry Overnight Oats

Ingredients

Dry Ingredients

  • 1/2 cup rolled oats (GF if neccessary)
  • 1 tbsp chia seeds
  • 1/3 cup fresh blackberries
  • 1 grated apple (core removed, skin on)

Wet Ingredients

Instructions

  1. Whisk together all the wet ingredients in a medium sized mixing bowl
  2. Mix in all the dry ingredients
  3. Spoon into jar with a tight fitting lid
  4. Refrigerate for at least 4 hours, but preferably overnight
  5. In the morning add more milk if needed and serve
