For me, the weekends are for fluffy pancakes. After the rush of the working week, I love to take my time in the mornings and savour my breakfast.

I love pancakes and like to experiment with different flavour combinations and textures. This one is a winner. Fluffy, light and with peanut butter flavor, what’s not to love?

I adore peanut butter, such a great way to get in your protein and fats if like me your not a big meat eater. Plus it keeps you nice and full for hours. I also used gluten free oats which is hands down my favourite grain, I could eat oats all day! They contain lots of fibre, provide so much energy and never leave me feeling sluggish.

In fact oats are a total beauty food! They have many beautifying properties such as biotin. Biotin not only helps to boost your metabolism and digestion, it also keeps your hair, skin, and nails healthy. One cup of oats contains 50% your recommended daily allowance of Biotin!

These are simple to make too, just one bowl and 15 minutes. You can even make a large batch and freeze for the week ahead.

Ingredients For Peanut Butter Pancakes Recipe

You need the following ingredients to make fluffy peanut butter pancakes

  • flax egg – normal eggs or chia eggs also work
  • almond milk – any milk will work
  • agave nectar – maple syrup also works
  • natural peanut butter – can sub for any nut butter
  • oat flour – can sub for whole wheat flour.

Optional Add Ins and Topping Ideas

  • chocolate chips – add a handful of chocolate chips to make peanut butter chocolate chip pancakes
  • cocoa powder – add some cocoa powder to the pancakes batter to make chocolate peanut butter pancakes
  • chocolate syrup – drizzle chocolate syrup on top of the pancake
  • vanilla extract – add 1 tsp of vanilla extract to the batter for extra flavor
  • peanut butter sauce – mix some melted peanut butter with some maple syrup and drizzle of your peanut butter eggless pancakes for extra peanut butter goodness

How to Make Vegan Peanut Butter Pancakes

Follow these steps to make healthy peanut butter pancakes. Full recipe details in the recipe card at the end of this post.

  1. Mix the dry ingredients in a large bowl
  2. Add the wet ingredients and stir to combine
  3. Heat a pan over medium-low heat and add a little coconut oil
  4. Pour a bit of the mixture in to the hot pan and cook for 2-3 minutes until golden brown and small bubbles start to appear, then flip to cook the other side.
  5. Repeat until all the remaining batter is used.
  6. Top with your favorite toppings
  7. Store leftovers in an airtight container

Peanut butter pancakes filled with nutty flavor they are the peanut butter lover’s dream. A very delicious way to start your day.


  • 1 flax egg /normal egg
  • ½ cup almond milk
  • 1 tbsp agave nectar
  • 1 tbsp natural smooth peanut butter plus extra for topping
  • 1 cup oat flour


  • Mix the dry ingredients in a bowl
  • Add the wet and stir to combine
  • Heat a pan over medium heat and add a little coconut oil or cooking spray
  • Pour a bit of the pancake batter in to the pan and cook for a few minutes until golden brown, then flip to cook the other side.
  • Repeat until all the mixture is used.
  • Top as you wish
