Jam and Peanut Butter White Chocolate Cups Recipe Ingredients

To make these white chocolate peanut butter cups you need:

  • white dairy free chocolate
  • peanut butter
  • strawberries (fresh or frozen)
  • chia seeds
  • maple syrup

How to make White Chocolate Peanut Butter Cups recipe

  1. First we make the strawberry chia jam by adding the strawberries in a saucepan over medium heat and simmer for about 10 minutes. We then mash the fruit until desired consistency. Remove from the heat and add the chia seeds and maple syrup. Sir until well combined and let it rest for at least 15 minutes
  2. Melt the white chocolate in a bowl over a saucepan full of boiling water or in a microwave
  3. Prepare a muffin tray with muffin cases and spoon 3/4 tbsp of melted chocolate into the bottom of each one. Place in the fridge to set.
  4. Once set we then add a teaspoon of peanut butter on top of the chocolate layer
  5. Next we add half a teaspoon of jam to the top of the peanut butter and used the spoon to flatten it and spread it across the top
  6. Finally we distribute the remaining chocolate over the top and place in the fridge to set

How to Store Peanut Butter White Chocolate Jam Bites

These jam bites are best stored in an airtight container in the fridge, they will last for two weeks.

Homemade White chocolate Reese Cups Substitutions

You can sub the smooth peanut butter for a crunchy peanut butter for a different texture. You can also sub the peanut butter for any nut butter such as cashew or almond.

The maple syrup can be subbed for any liquid sweetener. The strawberries can be subbed for a different fruit, I think raspberries would be delicious!

The white chocolate can be subbed for milk and dark chocolate.

  • 200 g dairy free white chocolate
  • 4 tbsp peanut butter
  • 1 cups strawberries (fresh or frozen)
  • 1/2 tbsp chia seeds
  • maple syrup to taste

Instructions
 

  • Make the chia jam by placing the strawberries in a saucepan over medium heat and simmer for about 10 minutes until it bubbles and breaks down. Mash the fruit until desired consistency. Remove from the heat and add the chia seeds. Add maple syrup and stir until well combined and let it rest for at least 15 minutes
  • Melt the white chocolate in a bowl over a saucepan full of boiling water
  • Set muffin cases out in a muffin tray and spoon 3/4 tbsp of melted chocolate into the bottom of each one. Place in the fridge to set.
  • Once set add a teaspoon of peanut butter on top of the chocolate layer
  • Add half a teaspoon of jam to the top of the peanut butter and used the spoon to flatten it and spread it across the top
  • Evenly distribute the remaining chocolate over the top and place in the fridge to set.
