What is Millionaire’s Shortbread

Also referred to as caramel shortbread or millionaire’s slice, Millionaire’s bars are a dessert that consists of 3 layers.

The first layer is a buttery shortbread cookie base, the second layer is gooey caramel center and the final layer chocolate!

Whilst traditional recipes use unhealthy ingredients, this recipe only used minimal ingredients that contain healthy fats and protein.

Healthy Millionaire Shortbread Ingredients

You only need the following six wholesome ingredients for this chocolate caramel shortbread shortbread recipe.

  1. Coconut flour – can sub with almond flour but will need to adjust the liquids used as coconut flour is more absorbent
  2. Coconut oil – can sub for dairy free or normal butter
  3. Pure Maple syrup – can sub for agave, honey or any liquid sweetener
  4. Peanut butter – can sub for almond butter or cashew butter
  5. Vanilla extract
  6. Dark chocolate (dairy free if necessary)

How to Make Healthy Millionaire Shortbread Recipe

  1. First prepare a 9-inch x 5-inch baking dish with parchment paper.
  2. In a medium bowl, add the coconut flour, maple syrup, and melted coconut oil.
  3. Mix, then knead the dough with your hands.
  4. Gather the dough into a ball and place it in the centre of your prepared dish.
  5. Press down the ball with your fingers to evenly cover the bottom of the dish. Smooth down the top of the layer with a spatula to make an even layer
  6. Place in the freezer, while making the caramel filling.
  7. In a small bowl, add the caramel ingredients- peanut butter, melted coconut oil, maple syrup, and vanilla and mix together
  8. Remove the baking dish from the freezer and pour the caramel over the top of the shortbread layer.
  9. Spread the caramel evenly  and return the dish into the freezer until firm.
  10. Meanwhile, melt the chocolate chips and coconut oil in a saucepan under medium heat.
  11. Remove the dish from the freezer and pour the melted chocolate on top of the caramel layer.
  12. Spread with a spatula to smooth and return to the freezer until the chocolate layer is set. Sprinkle with sea salt if desired.
  13. Remove from the freezer and slice into bars.
  14. Store the millionaire’s bars into an airtight container in the fridge for up to 5 days. You can also freeze your caramel slice for up to three months

Ingredients
  

For the crust

  • 1 ⅓ cup Coconut Flour
  • ½ cup Coconut Oil - melted
  • ½ cup Maple Syrup

For the caramel layer

  • cup Maple Syrup
  • 3 tablespoons Coconut Oil - melted
  • ½ cup Peanut Butter
  • teaspoon Vanilla

For the chocolate layer

  • 4.2 oz Dark Chocolate
  • 1 tablespoon Coconut Oil - melted

Instructions
 

  • Prepare a 9-inch x 5-inch rectangle baking dish with parchment paper. Set aside.
  • In a medium bowl, add coconut flour, maple syrup, and melted coconut oil.
  • Combine, then knead the dough with your hands. The dough will be soft and wet at first.
  • Gather the dough into a ball and place it in the centre of the prepared dish.
  • Press the ball with your fingers to evenly cover the bottom of the dish. Smooth down the top of the layer with a spatula
  • Place in the freezer, while making the caramel.
  • In a small bowl, add the peanut butter, melted coconut oil, maple syrup, and vanilla and combine
  • Remove the dish from the freezer and pour the caramel on top of the shortbread layer.
  • Spread the caramel evenly with a spatula and return the dish into the freezer until firm.
  • Meanwhile, melt the chocolate and melted coconut oil in a saucepan under medium heat.
  • Remove the dish from the freezer and pour the melted chocolate on top of the caramel layer.
  • Spread with a spatula to smooth and return to the freezer until the chocolate layer is set.
  • Remove from the freezer and slice into bars.
  • Store the bars into an airtight container in the fridge for up to 5 days
