Ingredients Needed for No Bake Chocolate Peanut Butter Cookies

You need the following common ingredients that are probably already your pantry staples to make this no bake cookie recipe

  • oats – any oats will work quick oats, old fashioned oats, use gluten-free oats if necessary
  • coconut oil – can sub for unsalted butter
  • maple syrup – can sub for honey or agave syrup. Can sub for brown sugar but will need to use a splash of almond milk
  • unsweetened cocoa powder – can sub for cacao powder
  • natural peanut butter – can sub for any nut butters or seed butter. I use creamy peanut butter, you can use crunchy peanut butter

Optional Addins and Toppings

  •  chocolate chips – add a handful of chocolate chips for extra indulgence
  • vanilla extract – add 1 tsp of vanilla extract for extra flavor
  • raisins – add in some raisins for extra chewy texture
  • pinch of salt – add a pinch of salt to bring out the chocolate flavor
  • almond – add some almond extract and flaked almonds

How to Make No Bake Oatmeal Cookies

  • Line a baking sheet with parchment paper
  • Add the coconut oil, maple syrup, peanut butter, and cocoa powder to medium saucepan on a medium heat and melt everything together on low heat. Stir until the chocolate mixture is smooth and well combined.
  • Add the oats to mixing bowl and pour the melted mixture in and stir until it is evenly combined
  • Drop a spoonful at a time of the cookie dough onto your prepared baking sheet. A medium cookie scoop will make this easier. Place in the freezer for around an hour until the biscuits are firm
  • Store leftovers in an airtight container in the fridge, cookies will become soft at room temperature
  • Cookies can be frozen in a freezer bag for up to 3 months.
